A joyful, sparkling revelation from Italy. Anyone thinking spumante is a glass of cheap, weak froth is in for a glorious surprise. This drink is a blend of three grapes, technical wizardry and experienced wine-making know-how.
In brief this is a drink from grapes grown in the Italian Dolomites from pergola-trained vines at up to 800 metres. They are hand-harvested in September and this bottle contains a blend of 60% Chardonnay, 30% Pinot Bianco and 10% Müller-Thurgau.
After pressing, the juice clarifies naturally before fermenting for some ten days before maturing on the lees (the sediment) for four to six months. A second fermentation then takes place and a further maturation for up to five months. It's a long, carefully-honed process that produces a glass of impressive elegance.
Sip and you'll get hints of white peach and melon, a balanced acidity and a soft sparkle. It's fresh, it's easy to drink but above all it's a glorious addition to your sparkling repertoire.
